Inside Look to the Pastry Kitchen

The pastry program at O’Brien’s Boulangerie has seen many changes during the last two years. Spearheaded by the youngest of the Escobar family, Edgar “Eddie” Escobar Jr., worked with a consultant before the business relocated to Poway last year to develop techniques and recipes that have since been implemented into the pastry department. 

Eddie decided early on that he wanted to change the production of ordinary breakfast pastries into something delicious and extraordinary.  He adapted a “no short cut” work model and quickly discontinued the use of pre-made muffin mixes to be replaced with the fresh from scratch recipes that our customers love and are accustomed to today.

Eddie also implemented the use of brioche recipes to both Danish and cinnamon roll recipes and also instated a classic French croissant recipe which yields approximately 35% of the departments overall sales.

Production of breakfast pastries and desserts has shown significant growth since Eddie’s integration into the family business in 2016.  Today, the pastry kitchen cranks out anywhere from 11,000 to 16,000 pieces of pastries in a single week.

Eddie and his pastry team continue to develop new items and anticipate more growth and demand of their delicious offerings, though the main goal will still remain the same: to provide a top quality product each and every time.

O’Brien’s Boulangerie Launches

Kids Tours: 

Curious Minds Welcomed!

What better way to enrich young growing minds than to bring them on an educational tour to O’Brien’s Boulangerie! Kids Tours at O’Brien’s provide a fun and friendly environment where children ages 8 and older can broaden their understanding of food, such as bread, gets to their lunch box and dinner table.

Tours typically last 90-minutes and consist of a walk through of the new facility where curious little tourist get an opportunity to learn about the baking process and see industrial bakery equipment while a tour guide explains how it is operated.

After the walk through, participants are lead into the pastry kitchen where one of O’Brien’s pastry bakers leads a hands on lesson on how to hand roll flaky and buttery croissants.

The tour wraps up with a cup of hot chocolate and chocolate chip cookie from O’Brien’s Café. Before departing the facility, children receive a bag which contains their handmade croissant as well as a turtle shaped sourdough.

O’Brien's had the pleasure of hosting a tour for a home schooled group from Poway as well as a local Girl Scouts troop during the month of January. We thank both groups for visiting us!

Spotlight Item of the Month:

Jalapeño Cheddar

Jalapeño Cheddar breads start off as tradition French dough which is infused with shredded cheddar cheese and pickled jalapeno peppers during the mixing process.  Once shaped and in the oven the shredded cheddar bakes to a toasty brown crisp.
